Over the last few years Bend Oregon has turned into a foodie paradise thanks to food carts which call the city home for most of the year.
Although the food carts here are awesome, there’s been a huge lack of vegan options but that’s finally changed thanks to Sierrah Umhauer and her new food cart “Earth Below”.
About Earth Below
Sierrah Umhauer started earth below because, there was a huge lack of vegan lunch options in town and after she purchased a cut wood-paneled food cart from an owner who lived on the coast, Umhauer was soon in business.
Right now her menu consists of primarily lunch options, including five smoothie, but that’s sure to change as she gains more experience in the hectic world of food carts and shares her unique brand with Bend.
What’s On the Menu?
Out of the unique items on the menu at the Earth Below food cart one of the best that stood out was their hearty, avotato sandwich; it consists mostly of large, roasted yams and is served on a sourdough bun with apple cole slaw as the side dish.
This sandwich will not leave you hungry at the end of the day for sure!
Besides the delicious avotato sandwich, the stir fry is also excellent as well and any of the big smoothies, which are 20-ounces in size, will fill you up and offer you a significant “liquid lunch” and give you enough energy for a quick workout at the gym, or run up Pilot Butte.
